Christmas Date Bark!
Ingredients
12-14 medjool dates
¼ cup smooth peanut butter
100g (3/4 cup) chocolate (buds/ melts). Note – can halve this if wanted.
1 teaspoon coconut oil
To decorate: Desiccated coconut, pistachios and dried cranberries
Method
1. Remove the pip from the dates, then using the bottom of a glass jar/cup
squash the dates to a thin layer (can do this on baking paper on a cutting board)
2. Arrange the dates to make a thin layer joined together
3. Spread with peanut butter
4. Add 100g chocolate and 1 teaspoon coconut oil into a bowl and microwave for 45 seconds. Remove, stir and microwave again for another 30-45 seconds until fully
melted.
Note do not leave in microwave for too long as will burn the chocolate
If want to halve the chocolate, use ½ teaspoon coconut oil
5. Spread melted chocolate over the top
6. To decorate, sprinkle with coconut, dried cranberries and pistachios
7. Freeze for 30 mins, then cut to serve
8. Store in the fridge
