Homemade Chocolate Rocks

INGREDIENTS:

750g Almonds (I use raw)

1/4 cup sunflower seeds

3 Tablespoons ground flaxseed/linseed

3-4 biscuits (eg milk arrowroot/scotch finger) crushed into small pieces

1 block of dark chocolate (or can use 50% milk 50% dark)

METHOD

  1. Break chocolate into small pieces and pop into a medium sized glass or porcelain bowl to melt (I use a glass bowl sitting on top of a saucepan filled to 1/4 with boiling water).

  2. Keep stirring chocolate in the bowl until fully melted.

  3. Add almonds, ground flaxseed, sunflower seeds and biscuits.

  4. Stir until chocolate coats everything then remove from stove

  5. Spread out over alfoil lined trays or plates and pop in the fridge to cool

Simple Hack: Serving with fruit such as berries, citrus or rock melon will significantly improve the absorption of nutrients such as iron/zinc in the nuts/seeds.
