Poke Bowls

Ingredients

Tin of organic black beans

Tin of diced tomatoes

Tin of corn kernels

White rice (or sub for brown)

Taco seasoning x 1-2 sachets

Ice berg lettuce - diced

1 onion

1 cup baby spinach - diced and mixed with 1/4-1/3 cup diced coriander diced (for the adults)

Cheese grated

Tomato x 2 - diced

Avocado x 1 diced

Corn chips (natural, unsalted)

500g chicken breast diced

Extra virgin Olive oil

METHOD

1. Cook the rice (brown or rice) and set aside.

2. Using 2-3 Tablespoons of extra virgin olive oil, fry the chicken breast and half a packet of taco seasoning until cooked (use more seasoning if wanted)

3. Using 2-3 Tablespoons of oil, fry  a diced onion for 3 minutes. Then add the tin of black beans and half of the taco seasoning sachet. Stir for a few minutes then add the tin of diced tomatoes, stir well, then simmer on low heat for another few minutes/

4. Add all the other ingredients into their own respective bowls with spoons (diced tomato, diced avocado, corn kernels, diced baby spinach with coriander, diced iceberg lettuce, grated cheese, corn chips)

5. Add rice, chicken and black beans into their own respective bowls and place on the table with the other bowls.

6. Enjoy the family meal together! 

Note: if the kids don't want particular ingredients - it's totally fine, let them self serve!
