Apple Cinnamon Muffins

Crunchy on top, soft in the middle!

Ingredients:

2 apples (skin on)
2 organic eggs (large)
1/2 cup milk
100g softened butter
1 heaped teaspoon cinnamon 1 teaspoon baking powder
1 2/3 cups wholemeal SR flour 1/2 cup raw sugar

Makes 12 yummy muffins

Directions:

1. Preheat oven to 200 degrees Celsius

2. Soften butter and mix with sugar

3. Grate in 2 apples (including the skin)

4. Using a whisk, beat in eggs, milk, then all other ingredients except flour

5. With spoon, mix in flour well
6. Scoop batter into 12 muffin patty pans 7. Bake for approx 20 mins
8. Option to dust with icing sugar
