French Toast

Ingredients:

2 eggs

½ cup milk (any type)

1 teaspoon vanilla extract

½ teaspoon cinnamon

4 pieces wholemeal bread (thick)

Method:

1. Beat eggs, milk, vanilla and cinnamon in a bowl

2. Dunk bread into the wet mix coating well on both sides

3. Fry in butter (use Nuttelex or coconut oil for dairy free option)

4. Serve with your topping of choice – honey, yogurt, maple syrup with a side of fresh fruit –

strawberries and banana are a good match

Note: To maximise iron absorption, choose Vitamin C rich fruits such as strawberries, kiwi,

oranges or mandarin.
