Nourish Zucchini Slice

Ingredients:

3 medium zucchini – finely grated (approx. 3 cups after water has been squeezed out)

5 eggs

1 cup wholemeal flour

1 teaspoon baking powder

1 Tablespoon Dijon mustard

1 ¾ cups tasty cheddar cheese- grated

¼ cup extra virgin olive oil

Salt and pepper to taste

Method:

1. Preheat oven to 180 degrees Celsius

2. Finely grate the zucchini (skin on)

3. With your hands, squeeze handfuls of grated zucchini, so that you press out all the water

4. Add the zucchini to a bowl, then add the oil, 1 cup of grated cheese, salt and pepper.

Mix well

5. Beat the 5 eggs in a separate bowl, then add the flour, baking powder and mustard. Mix well until a smooth paste form

6. Add egg mixture into zucchini mixture and mix well until a runny “cake like” mixture forms

7. Line a square baking pan with baking paper, then pour mixture into it

8. Over the top of the mixture, sprinkle the other ¾ cup grated cheese

9. Bake for 60 mins, then remove from oven and let cool, before storing in the fridge
