Basic Lemon Cake

INGREDIENTS

  • 2 eggs (preferably free range/organic)

  • 50g coconut oil

  • 50g butter

  • 1/2 cup vanilla yoghurt

  • 1/2 cup sugar

  • 1 teaspoon vanilla essence

  • 1 teaspoon baking powder

  • 1 34 cups wholemeal SR flour

  • finely grated rind of 2 large lemons

METHOD

  1. Whisk 2 eggs, then add the sugar, yoghurt, vanilla essence, baking powder, lemon rind

  2. Melt butter and coconut oil in microwave/on stove until just melted

  3. Add melted butter and oil to the wet mix and mix in well

  4. Stir in wholemeal SR Flour

  5. Tip mixture into square baking tin lined with baking paper

  6. Bake at 180 degrees celcius for approx 40 mins (until knife inserted in centre comes out clean)

Note: Using natural yoghurt will slightly reduce the sweetness of the cake.
