Crunchy on top, soft in the middle...Apple and Cinnamon Muffins

Makes 12 yummy muffins:

INGREDIENTS:

🍎 2 apples (skin on)
🍎 2 organic eggs (large)
🍎 1/2 cup milk
🍎 100g softened butter
🍎 1 heaped teaspoon cinnamon
🍎 1 teaspoon baking powder
🍎 1 2/3 cups wholemeal SR flour
🍎 1/2 cup raw sugar

METHOD:
🍎 Preheat oven to 200 degrees Celsius
🍎 Soften butter and mix with sugar
🍎 Grate in 2 apples (including the skin)
🍎 Using whisk, beat in eggs, milk, then all other ingredients except flour
🍎 With spoon, mix in flour well
🍎 Scoop batter into 12 muffin patty pans
🍎 Bake for approx 20 mins
🍎 Option to dust with icing sugar
