Crunchy on top, soft in the middle...Apple and Cinnamon Muffins
Makes 12 yummy muffins:
INGREDIENTS:
π 2 apples (skin on)
π 2 organic eggs (large)
π 1/2 cup milk
π 100g softened butter
π 1 heaped teaspoon cinnamon
π 1 teaspoon baking powder
π 1 2/3 cups wholemeal SR flour
π 1/2 cup raw sugar
METHOD:
π Preheat oven to 200 degrees Celsius
π Soften butter and mix with sugar
π Grate in 2 apples (including the skin)
π Using whisk, beat in eggs, milk, then all other ingredients except flour
π With spoon, mix in flour well
π Scoop batter into 12 muffin patty pans
π Bake for approx 20 mins
π Option to dust with icing sugar
