Nonna's semolina
INGREDIENTS (makes 2 large serves)
1/2 cup Semolina (preferably fine)
2 cups milk
1 teaspoon vanilla extract
2 teaspoons sugar
METHOD
Whisk Semolina and milk in a saucepan and put on stove
Stir with whisk as you bring the milk to the boil
Keep stirring slowly over the next 2-3 minutes whilst the semolina thickens
Once the semolina thickens and starts “puffing” at you, remove from the stove
Stir in 1 teaspoon vanilla extract and 2 teaspoons (heaped) raw sugar
Serve plain or topped with banana or fruit of choice (tinned fruit also yummy)
