Nonna's semolina

INGREDIENTS (makes 2 large serves)

  • 1/2 cup Semolina (preferably fine)

  • 2 cups milk

  • 1 teaspoon vanilla extract

  • 2 teaspoons sugar

METHOD

  1. Whisk Semolina and milk in a saucepan and put on stove

  2. Stir with whisk as you bring the milk to the boil

  3. Keep stirring slowly over the next 2-3 minutes whilst the semolina thickens

  4. Once the semolina thickens and starts β€œpuffing” at you, remove from the stove

  5. Stir in 1 teaspoon vanilla extract and 2 teaspoons (heaped) raw sugar

  6. Serve plain or topped with banana or fruit of choice (tinned fruit also yummy)
