Immune boosting “super food” kale salad, loaded with goodness and yummy too!
Tonight I created a “super food” salad which was super yummy.
Fantastic for the immune system at a time like this! Yes we had meat and fresh bread to accompany, but seriously - I probably could have just had the salad as it was basically a complete meal! All I probably needed to add was legumes such as chickpeas or kidney beans.
The recipe went something like this:
🥬 1/2 bunch chopped organic kale
🥬 chopped fresh herbs- parsley, coriander and mint.
🥬 very plentiful sprinkle of flaked almonds and whole pistachios - approx 1 cup altogether
🥬 red capsicum diced.
🥬 pomegranate (thanks to the tree up the street!!).
🥬 roasted cauliflower - baked with Extra Virgin Olive Oil.
🥬 Would have added 1 cup of cooked quinoa and 1 avocado but didn’t have any!
🥬 I topped with dressing of 1 tsp honey, 1 tsp Dijon mustard, 1/4 cup each of white wine vinegar and Extra Virgin Olive Oil
🥬 Y. U. M!!! Did the kids love it- not yet 🤣🤣 but my exact words at the table were- you might like it one day!! Remember no food pressure 👊
