Chicken Kebabs
Ingredients:
500 grams chicken breast, cut into bite-sized pieces
1/4 cup olive oil
2 tablespoons lemon juice
1-2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon paprika
Salt and pepper to taste
8 wooden or metal skewers
Method:
In a large bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, paprika, salt, and pepper. Mix well to create the marinade.
Add the chicken pieces to the marinade and toss until each piece is coated.
Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or preferably, up to 2 hours.
If using wooden skewers, soak them in water for about 30 minutes to prevent them from burning while grilling.
Preheat your grill or grill pan to medium-high heat.
Thread the marinated chicken pieces onto the skewers.
Grill the chicken skewers for about 4-5 minutes on each side or until they are cooked through and have nice grill marks.
