Muesli Bars

Ingredients

  • 2 cups oats

  • 1 cup almond meal

  • 1/3 cup dried cranberries

  • ¼ cup sunflower seeds

  • 1/3 cup desiccated coconut

  • 2/3 cup coconut oil

  • 2 teaspoon vanilla essence

  • 2 Tablespoons ground flaxseed meal

  • 1 Tabespoon chia

  • ¼ cup plant milk (or regular)

  • ½ cup maple syrup

Method

1. Preheat oven to 200 degrees Celsius

2. Line a baking tray with baking paper

3. Melt the coconut oil, milk, maple syrup and vanilla essence together in a pan over medium heat.

4. Once melted, remove from heat and set aside.

5. Mix all the other dry ingredients (together in a mixing bowl)

6. Add the wet mixture into the dry mixture and stir well

7. Pour mixture into pan and bake for 15-20 mins until gold

8. Remove from oven and allow to cool, then cut into preferred slices
