Black Bean Brownies

 

Seriously yummy, healthy black bean brownies for the kids - even the mums fight over these ones!

Ingredients:

1 x 400g tin organic black beans (strained and rinsed)

3 tablespoons coconut oil

3 free range eggs (preferably organic)

1/3 cup cocoa powder
1/3 cup raw sugar
Pinch of salt
3 teaspoons vanilla essence 1 teaspoon baking powder

Directions:

1. Preheat oven to 160 degrees celcius

2. Line a square baking tray with baking paper (and slightly grease tray to enable paper to stick to pan)

3. Blend all ingredients togaether in a food processor at high speed until forms a paste

4. Cook for approx 25 - 30 mins until ready (knife placed in centre of brownie comes out clean)
