BUILD YOUR OWN MINI QUICHE

 
Healthy recip

INGREDIENTS

  • 4 eggs

  • 1 cup milk

  • salt

  • pepper

  • 1 cup grated cheddar cheese

  • pastry - 3 sheets  (or 12 pieces of buttered wholemeal bread, no crusts)

  • 1 spring onion - finely diced

  • 1/4 cup red capsicum

  • 1/4 cup mushrooms

  • 1/3 cup diced baby spinach

METHOD

  1. preheat oven to 200 degrees celcius

  2. Grease muffin tray with butter or line each hole with squares of cut baking paper

  3. Cut puff pastry into 12 circles using the edge of large glass or coffee mug

  4. Press each pastry round into a muffin hole (note if using bread, place buttered side down into the muffin hole)

  5. Beat eggs and milk together in a bowl

  6. Add salt and pepper to taste

  7. Pour egg mixture evenly amongst 12 muffin  holes

  8. Add vegetables of choice into the egg mix of each muffin hole

  9. Top with grated cheese - spread evenly amongst the 12 muffin hols

  10. Bake for 20 mins at 200 degrees until golden
