Raspberry choc-chip cake - yummy and healthy!

INGREDIENTS

2 large bananas (or 3 medium)

1 cup frozen raspberries

1/2 cup dark chocolate buds

2 eggs

1/2 cup raw sugar

1 teaspoon vanilla essence

1 teaspoon baking powder

60g coconut oil (liquid)

1/2 cup vanilla yoghurt

1/2 cup full cream milk

3 Tablespoons flaxseed meal

2 cups wholemeal SR Flour

METHOD

  1. Preheat oven to 180 degrees celcius

  2. Whisk eggs, then mix in coconut oil, vanilla essence, yoghurt, milk and mix well

  3. To the same bowl, add the sugar, baking powder, flaxseed meal, well mashed bananas and whisk well

  4. Add the flour and stir to combine well

  5. Add the choc buds and frozen raspberries and stir gently until just mixed

  6. Bake for approx 45 mins (fan forced) until knife inserted into the centre comes out clean.
