Best Ever Roast Potatoes

Ingredients

  • 6-8 Regular potatoes (skin on)

  • Extra virgin olive oil

  • Dried rosemary

  • Iodised Salt – optional

Method

  1. Preheat oven to 220 degrees Celsius

  2. Chop potato into either wedges or pieces 2cm x 2cm (if baby potatoes, just cut into half)

  3. Spread out over oven tray

  4. Drizzle good amount of extra virgin olive oil over potatoes

  5. Sprinkle with dried rosemary

    Optional – sprinkle with iodised salt

  6. Cook in oven for 30 mins – until they turn golden

Notes:

  1. Use 1-2 potatoes per person depending on size

  2. For extra soft potatoes on the inside, pre boil them (whole) for 20 mins. Then strain and cut into pieces prior to adding to pan
