Capsicum Egg Flowers

Ingredients

  • 1 Red capsicum (the rounder the better)

  • 2 Eggs

  • Extra Virgin Olive Oil

Method

  1. Cut capsicum into 1 cm rounds

  2. Place extra virgin olive oil (approx. 1 Tbsp) into pan on moderate heat.

  3. Cook each capsicum circle (x 2) for 30 seconds on each side

  4. Then crack an egg into the centre of each capsicum circle and cook for another 60 seconds (approx.) until the egg is cooked to your liking.

  5. 5. Serve on toast or as it, with a side of sauce.
