Coconut Almond Bites!
(makes about 15 bites)
(Dairy and Egg Free)
Ingredients
1 cup desiccated coconut
2/3 cup almond meal
½ cup Self Raising Flour
1/3 cup Maple Syrup
1/3 cup coconut milk (or coconut cream)
Method:
Preheat oven to 180 degrees Celsius (fan bake)
Mix all ingredients together in a bowl – stir until combined into a smooth cookie dough consistency
With a Tablespoon, scoop out some of the mixture and place onto a lined baking tray, then repeat for the rest of the mixture.
Cook for 20-25 minutes until the edges of the cookies are golden.
Cool on tray and enjoy!
Note: You could easily substitute SR Flour for gluten free flour if needing Gluten Free.
