Coconut Almond Bites!

Coconut Almond Bites!

(makes about 15 bites)

(Dairy and Egg Free)

Ingredients

  • 1 cup desiccated coconut

  • 2/3 cup almond meal

  • ½ cup Self Raising Flour

  • 1/3 cup Maple Syrup

  • 1/3 cup coconut milk (or coconut cream)

Method:

  1. Preheat oven to 180 degrees Celsius (fan bake)

  2. Mix all ingredients together in a bowl – stir until combined into a smooth cookie dough consistency

  3. With a Tablespoon, scoop out some of the mixture and place onto a lined baking tray, then repeat for the rest of the mixture.

  4. Cook for 20-25 minutes until the edges of the cookies are golden.

  5. Cool on tray and enjoy!

Note: You could easily substitute SR Flour for gluten free flour if needing Gluten Free.
