Carrot and walnut muffins

A crowd favourite! These little gems are packed with nutrition and also taste great! Just leave out the walnuts for child care or school.

Ingredients:

1 cup wholemeal SR flour
2 free range eggs (preferably organic)

1 large carrot finely grated 1⁄2 zucchini finely grated

1⁄2 cup chopped walnuts
1⁄2 cup extra virgin olive oil 1⁄4 cup sugar

1 teaspoon baking powder 1 teaspoon cinnamon

Directions:

1. Preheat oven to 200 degrees celsius

2. Beat eggs on high for one minute

3. Add all other ingredients and mix well

4. Bake for 15 mins
