Christmas Snowballs

Ingredients

  • 3⁄4 cup cashews

  • 1 cup desiccated coconut 3 Tablespoons honey

  • 2 Tablespoons coconut oil

Method

  1. Place the cashew nuts and desiccated coconut in a food processor and blend very well.

  2. Put the coconut oil into a cup and heat in the microwave for 15-20 seconds at a time

    until melted.

  3. Pour the coconut oil into the blender, along with the honey.

  4. Blend all ingredients together until smooth and well combined.

  5. Take “walnut sized” pieces of the mixture, firmly press it together and roll it into balls.

  6. Roll each ball in the extra desiccated coconut to coat then place on a plate to serve!
