Homemade Chicken Nuggets
Ingredients
500g chicken breast
1 cup wholemeal flour (or cornflour)
2-3 cups breadcrumbs
2 eggs
Salt and pepper to taste
Extra virgin olive oil for frying
(enough to cover base of the fry pan)
Method
1. Place flour, beaten eggs and breadcrumbs into 3 separate bowls in that order.
2. Cut chicken breast into nugget size pieces.
3. Roll piece of chicken in flour, then egg, then finish off with breadcrumb coating.
4. Heat olive oil in pan.
5. Drop small amount of breadcrumb in the pan to assess whether oil is hot enough for frying.
6. Once hot enough, add nuggets.
7. Cook for a few minutes only – using a tong to turn every 30-60 seconds to ensure they don’t burn (you will need to turn the heat down after a while.. and perhaps add extra oil if needed).
8. Once cooked place on paper towel.
