Nourish Date Bark
Ingredients:
12-14 medjool dates
¼ cup smooth peanut butter
2 Tablespoons peanuts
2 Tablespoons dry roasted chick peas (can be salted)
100g (3/4 cup) chocolate (buds/ melts). Note – can halve this if wanted.
1 teaspoon coconut oil
Method:
1. Finely chop peanuts and chick peas
2. Remove the pip from the dates, then using the bottom of a glass jar/cup squash the
dates to a thin layer (can do this on baking paper on a cutting board)
3. Arrange the dates to make a thin layer joined together
4. Spread with peanut butter
5. Sprinkle with chick pea/peanut mix
6. Add 100g chocolate and 1 teaspoon coconut oil into a bowl and microwave for 45 seconds. Remove, stir and microwave again for another 30-45 seconds until fully melted.
a. Note do not leave in microwave for too long as will burn the chocolate
b. If want to halve the chocolate, use ½ teaspoon coconut oil
7. Spread melted chocolate over the top
8. Freeze for 30 mins
