Simple black bean salsa

Ingredients

  • 1 tin black beans

  • 1 tin crushed/diced tomatoes

  • 1 onion - diced

  • ½ diced red capsicum

  • 1 sachet taco seasoning

  • ¼ cup extra virgin olive oil

Method

  1. Cook onion in olive oil (medium heat) for a few minutes, then add the diced capsicum and continue cooking for a few minutes

  2. Add spice mix and stir through (add ½-1 depending on taste preference)

  3. Strain and rinse black beans, then add to onion/capsicum mix and stir well on moderate heat for one minute

  4. Add diced/crushed tomatoes and simmer for 5 minutes

This mix can be used in many ways – it can be served with rice, wraps, added to a quesadilla or used as part of your favourite poke bowl ingredients!
