Simple black bean salsa
Ingredients
1 tin black beans
1 tin crushed/diced tomatoes
1 onion - diced
½ diced red capsicum
1 sachet taco seasoning
¼ cup extra virgin olive oil
Method
Cook onion in olive oil (medium heat) for a few minutes, then add the diced capsicum and continue cooking for a few minutes
Add spice mix and stir through (add ½-1 depending on taste preference)
Strain and rinse black beans, then add to onion/capsicum mix and stir well on moderate heat for one minute
Add diced/crushed tomatoes and simmer for 5 minutes
This mix can be used in many ways – it can be served with rice, wraps, added to a quesadilla or used as part of your favourite poke bowl ingredients!
