Soft Apricot Bliss Balls
Perfect for after-school snacks
Ingredients
1 cup dried apricots
½ cup rolled oats
½ cup almond meal
½ cup desiccated coconut + extra for rolling balls in
1 tbsp coconut oil
Hot water (to soak apricots)
Method
1. Soak apricots in boiling water for 5 mins to soften
2. Then strain and add to food processor, with all other ingredients.
3. Blend together until sticky.
4. Roll into bite-sized balls, then roll in desiccated coconut to finish.
5. Store in the fridge for up to a week.
