Nourish Green Dressing

Ingredients

  • 1 cup fresh parsley leaves and tender stems

  • 1 cup fresh basil, leaves and tender stems

  • ½ cup packed fresh dill

  • ½ spring onion chopped

  • 1 small garlic clove

  • 1 lemon (juice only)

  • ½ cup extra virgin olive oil

  • ½ avocado

  • Water if needed – approx. ¼ cup

  • Salt and pepper to taste

Method

  1. Blend in food processor: The fresh herbs, spring onion, garlic and extra virgin olive oil.

  2. Add the lemon juice and avocado. Close the lid and blend again until well-combined.

  3. Run the processor again, this time, drizzle water through the top opening. You will need anywhere from ¼ cup - ½ cup of water until the mixture turns creamy

  4. Add salt and pepper to taste

Note

  • Store in a glass jar in the fridge for up to 1 week

  • Use as a salad dressing, a dipping sauce for nuggets or crumbed fish, drizzled over vegetables or meat, drizzled over a pizza.
