Nourish Green Dressing
Ingredients
1 cup fresh parsley leaves and tender stems
1 cup fresh basil, leaves and tender stems
½ cup packed fresh dill
½ spring onion chopped
1 small garlic clove
1 lemon (juice only)
½ cup extra virgin olive oil
½ avocado
Water if needed – approx. ¼ cup
Salt and pepper to taste
Method
Blend in food processor: The fresh herbs, spring onion, garlic and extra virgin olive oil.
Add the lemon juice and avocado. Close the lid and blend again until well-combined.
Run the processor again, this time, drizzle water through the top opening. You will need anywhere from ¼ cup - ½ cup of water until the mixture turns creamy
Add salt and pepper to taste
Note
Store in a glass jar in the fridge for up to 1 week
Use as a salad dressing, a dipping sauce for nuggets or crumbed fish, drizzled over vegetables or meat, drizzled over a pizza.
