Choc Apricot Cookies - tasty and healthy!
INGREDIENTS (makes approx. 15 small cookies)
2 cups rolled oats
1 cup wholemeal flour
1 teaspoon baking powder
1 Tablespoon chia
2 Tablespoons ground flaxseed
120g butter
1/4 cup honey + 1/4 golden syrup (or can also use maple syrup or sugar - equivalent of 1/2 cup total)
1/3 cup diced apricots
1/4-1/3 cup chocolate buds (depending on how much you wish to add!)
METHOD
Preheat oven to 180 degrees celcius
Mix all dry ingredients together in a bowl.
Over low heat, melt butter, honey and golden syrup together in a pan
Remove from stove and add wet ingredients to dry and mix well to moisten all of the oats
Wait 10 mins for the mixture to cool, then add apricots and choc chips
Line baking tray with baking paper .
Roll mixture into small balls
Bake for approx. 15 mins until the cookies are slightly golden (do not overcook)
Remove from oven and allow to cool before transferring to an air tight container
