Choc Apricot Cookies - tasty and healthy!

INGREDIENTS (makes approx. 15 small cookies)

  • 2 cups rolled oats

  • 1 cup wholemeal flour

  • 1 teaspoon baking powder

  • 1 Tablespoon chia

  • 2 Tablespoons ground flaxseed

  • 120g butter

  • 1/4 cup honey + 1/4 golden syrup (or can also use maple syrup or sugar - equivalent of 1/2 cup total)

  • 1/3 cup diced apricots

  • 1/4-1/3 cup chocolate buds (depending on how much you wish to add!)

METHOD

  1. Preheat oven to 180 degrees celcius

  2. Mix all dry ingredients together in a bowl.

  3. Over low heat, melt butter, honey and golden syrup together in a pan

  4. Remove from stove and add wet ingredients to dry and mix well to moisten all of the oats

  5. Wait 10 mins for the mixture to cool, then add apricots and choc chips

  6. Line baking tray with baking paper .

  7. Roll mixture into small balls

  8. Bake for approx. 15 mins until the cookies are slightly golden (do not overcook)

  9. Remove from oven and allow to cool before transferring to an air tight container

  10. ENJOY!
