Pad Thai

 
Healthy recipes

Ingredients:
- 400g rice stick noodles
- 1/3 cup extra virgin olive oil
- 500g chicken breast
-1 onion
- 1/2 bunch coriander
- 1 bok choy
- 1 medium red capsicum
- 12 snow peas
- handful of bean sprouts
- 1/2 cup crushed peanuts
- 1/2 jar pad Thai paste (120g)
- 1 large lime
- 2 eggs (scrambled)

METHOD
1. Fry diced onion in oil
2. Slice chicken into strips/ pieces and add to oil
3. Add a little of the paste to flavour the chicken
4. Finely slice capsicum, bok choy and snow peas then add to the pan. Simmer for a few minutes.
5. Boil water in a pot and add noodles- simmer for 5 mins to soften
6. Add the rest of the paste to the vegies and chicken and mix through, add bean sprouts then squeeze the lime juice over the top.
7. Strain the noodles then add them to the pan and then add scrambled eggs  and coriander.
8. Serve with lemon wedges and crushed peanuts.
