5 Minute Pasta Sauce

Fussy eater

Ingredients

  • 1 regular brown onion (not red) – finely diced

  • 1 jar tomato based pasta sauce (if don’t have this use passata or 1 tin diced tomatoes + 1 teaspoon sugar)

  • 1⁄4 cup Extra Virgin Olive Oil

  • 1 Tablespoon Balsamic Vinegar

  • 1⁄2-1 teaspoon dried Oregano or Italian herb mix (can also use fresh herbs)

  • Salt and Pepper

Method

  1. Add 1⁄4 cup oil to the pan and fry the onion for 2 mins on medium heat until caramelised but not burn

  2. Add the tomato based sauce, balsamic vinegar, oregano, salt and pepper to taste

  3. Simmer for 3 mins on medium heat stirring

  4. Serve with your favourite pasta or meatballs!
