Banana & Choc Chip Muffins

This family favourite adds a bit of chocolate treat, whilst still being quite a healthy snack - loaded with fibre and vitamins. It can also be adapted to be dairy free using nuttelex, milk substitute and 70%-90% dark chocolate.

Ingredients:

2 eggs

1/4 cup honey

1 teaspoon vanilla essence

50g coconut oil

50g butter (or nuttelex)

3/4 cup full cream milk (or milk substitute)

3 bananas

2 cups wholemeal self raising flour

1/4-1/3 cup dark choc buds (could also use cacao nibs)

Makes approx 12 muffins

Directions:

1. Preheat oven to 190 degrees celsius 2. Soften butter and coconut oil

3. Add all ingredients except for chocolate buds into food processor and blend well.

4. Mix in chocolate buds at the end
5. Spoon mixture evenly into regular or mini muffin tray

6. Bake for approx 18-20 mins until slightly brown on top. Cool in tray.
