Karina's Banana Bread
Loaded with nutrient rich bananas, iron rich eggs, high fibre flour and low in sugar, this delicious recipe ticks all boxes!
Ingredients:
2 cups wholemeal SR flour
3 free range eggs (preferably organic)
4 mashed ripe bananas
100g melted butter
1⁄4 cup full cream milk (or other if you prefer)
1/3 cup sugar
1 teaspoon baking powder 1 teaspoon cinnamon
1 teaspoon vanilla essence 1⁄2 cup desiccated coconut
Directions:
1. Preheat oven to 180 degrees celsius
2. Beat eggs on high for one minute
3. Add all other ingredients and mix well with a spoon 4. Line a cake tin (preferably square) with baking paper
5. Bake for 60 mins or until cake is ready (knife inserted into centre comes out clean)
