Banana, Egg and Oat Pikelets
Ingredients (makes approx. 15 mini)
1 ripe banana
2 eggs (preferably organic)
1/3 cup oats
Coconut oil (or butter) for cooking
Method
1. Mash banana
2. Whisk eggs well
3. Add mashed banana, oats and cinnamon and mix well
4. Add 1 teaspoon coconut oil (or butter) into pan on medium heat
5. Spoon 1 tablespoon of mixture into pan and cook each side for approx. 60 seconds (more or
less depending on heat of your pan)
6. Serve with peanut butter, yoghurt or fresh fruit!
