BASIC PASTA SAUCE

Ingredients:

1 diced onion

¼ cup extra virgin olive oil

1 can diced tomatoes (or passata)

1 Tablespoon tomato paste (or pizza sauce)

1 Tablespoon balsamic vinegar (caramelised is fine)

1 teaspoon dried oregano or basil (you can also use as many fresh herbs as you wish!)

Salt and pepper to taste

Method:

1. Diced onion and then add to saucepan with olive oil

2. Fry (saute) on moderate heat for 5 mins until onions are golden

3. Add diced tomatoes and tomato paste and stir well

4. Add herbs and balsamic vinegar

5. Salt and pepper to taste

6. Simmer on low for 5 minutes stirring well.

7. Serve with fresh pasta!

Note:

My nonna may have added a teaspoon of sugar if the sauce was too acidic, so feel free to do that if you need to!
