Brocolli Bites!

Ingredients

  • 1 regular broccoli head

  • 1 small carrot – finely grated (can omit if child wont eat!)

  • 2 spring onions – finely diced

  • 2 garlic cloves (finely diced)

  • 2 eggs

  • 2/3 cup grated cheese (mozzarella or cheddar)

  • 1/2 cup breadcrumbs

  • Extra virgin olive oil

Method:

  1. 1. Steam broccoli florets for 10 minutes until soft, then remove and let cool

  2. Preheat oven to 200 degrees Celsius

  3. Line tray with baking paper

  4. Mash broccoli into a bowl, then add grated carrot, garlic, eggs, cheese, spring onions and breadcrumbs

  5. Season with salt and pepper to taste

  6. Mix together well

  7. Scoop up a heaped tablespoon of the mixture and roll into a ball with your hand (note if the mixture is too runny, add extra breadcrumbs)

  8. Place on a tray

  9. With a pastry brush, brush broccoli bites with extra virgin olive oil

  10. Bake for 25 mins or until they turn golden

  11. Serve with favourite mayonnaise or sauce!
