Coconut Blueberry Granola Bar

Ingredients

  • ½ cup coconut oil

  • ½ cup honey (or golden syrup)

  • 1 Tablespoon vanilla essence

  • ¼ cup plant milk

  • 2 cups oats (quick oats are fine)

  • 1 cup almond meal

  • 1/3 cup desiccated coconut

  • 1 Tablespoon chia seeds

  • 1 Tablespoon ground flaxseeds

  • ¼ cup dried blueberries

Method

  1. Preheat oven to 180 degrees Celsius

  2. Add coconut oil, plant milk, vanilla essence and honey into saucepan and heat over moderate heat for 1-2 minutes stirring until well mixed

  3. Mix all dry ingredients together in a bowl

  4. Add the wet ingredients to the dried ingredients and mix well

  5. Line a baking tray with baking paper, then add the mix and spread out with the back of a metal spoon

  6. Bake for approximately 20-25 minutes until golden on top.

  7. Leave to cool in pan, then cut to your preferred bar size.
