Coconut Blueberry Granola Bar
Ingredients
½ cup coconut oil
½ cup honey (or golden syrup)
1 Tablespoon vanilla essence
¼ cup plant milk
2 cups oats (quick oats are fine)
1 cup almond meal
1/3 cup desiccated coconut
1 Tablespoon chia seeds
1 Tablespoon ground flaxseeds
¼ cup dried blueberries
Method
Preheat oven to 180 degrees Celsius
Add coconut oil, plant milk, vanilla essence and honey into saucepan and heat over moderate heat for 1-2 minutes stirring until well mixed
Mix all dry ingredients together in a bowl
Add the wet ingredients to the dried ingredients and mix well
Line a baking tray with baking paper, then add the mix and spread out with the back of a metal spoon
Bake for approximately 20-25 minutes until golden on top.
Leave to cool in pan, then cut to your preferred bar size.
