Honey Mustard and Dill Potato Salad

Ingredients

  • 1 heaped teaspoon wholegrain mustard

  • ¼ cup red wine vinegar

  • ¼ cup Extra Virgin Olive Oil

  • 1 teaspoon honey

  • 1 Tablespoon finely diced dill

  • 6-8 red potatoes

  • Salt and pepper to taste

Method

  • Boil whole potatoes in boiling water for 15-20 minutes until soft

  • Remove from water and let cool

  • Mix all dressing ingredients

  • Cut potatoes into pieces (cut each potato into 4 or 6 depending on size)

  • Add potatoes pieces to a large serving bowl

  • Drizzle dressing over the potatoes

**perfect to serve with a BBQ or fish meal
