Honey Mustard and Dill Potato Salad
Ingredients
1 heaped teaspoon wholegrain mustard
¼ cup red wine vinegar
¼ cup Extra Virgin Olive Oil
1 teaspoon honey
1 Tablespoon finely diced dill
6-8 red potatoes
Salt and pepper to taste
Method
Boil whole potatoes in boiling water for 15-20 minutes until soft
Remove from water and let cool
Mix all dressing ingredients
Cut potatoes into pieces (cut each potato into 4 or 6 depending on size)
Add potatoes pieces to a large serving bowl
Drizzle dressing over the potatoes
**perfect to serve with a BBQ or fish meal
