Kids Fried Rice
Supercharge their little bodies with a super tasty rainbow of vegetables!
Ingredients:
3 cups cooked basmati rice 1 small onion
1 small red capsicum
1 carrot
1.5 cups cauliflower chopped
1 cup frozen peas
1.5 cups frozen corn
3 free range eggs (preferably organic)
+/- 1 cup chopped left over diced turkey or chicken
2 tablespoons kecap manis soy sauce
Extra virgin olive oil for cooking (EVOO)
Pepper to taste
Directions:
1. Using food processor (or chopping board), finely dice cauliflower, capsicum, carrot and onion.
2. Cover base of fry pan generously with EVOO then on low heat saute the above vegetables. After a few mins cover with a lid to help to steam them and prevent burning.
3. Steam the peas and corn until just cooked and then add to the cooked vegetables in the pan
4. Beat the 3 eggs lightly with a fork, then scramble in pan. Once cooked, chop into small pieces.
5. Add the rice and eggs to the vegetables and mix well, then drizzle approx 2 Tablespoons of kecap manis soy sauce all over and mix in well.
6. If needing to use up left over turkey or chicken, dice finely and then add approx 1 cup to the rice mixture
7. Season with pepper and ENJOY!
