Superfood Salad - for the parents!
Loaded with goodness, this one is great for the immune system and yummy too!
Ingredients:
1/2 bunch kale
1/2 cup (or more) of chopped fresh herbs (think basil, mint, coriander, parsley)
1/2 cup chopped nuts (pistachios, flaked almonds, pine nuts, cashews)
1 red capsicum - diced
1/2 cup pomegranate seeds
1/2 cauliflower steamed and then roasted in extra virgin olive oil
1 avocado - diced
Dressing:
1 tsp honey
1 tsp Dijon mustard
1/4 cup of white wine vinegar
1/4 cup extra virgin olive oil
Directions:
1. Steam then roast cauliflower drizzled with EVOO
2. Mix kale, herbs, capsicum, nuts and pomegranate seeds
3. Then sprinkle over diced avocado and roasted cauliflower pieces
4. Drizzle dressing all over (add extra EVOO if needed) 5. Pepper to taste
