Roasted Veg and Quinoa Salad
A delicious and healthy warm salad for parents and hopefully kids!
Ingredients:
1 cup of Quinoa (uncooked)
1 medium eggplant (with 50% of skin peeled off - leaving stripes)
2 zuchinni
1 large capsicum
2 garlic cloves - in chunks 2 large sprigs rosemary
1/2 cup (or more) of fresh herbs such as basil, parsley, coriander, mint
1/2 cup fresh nuts (think pine nuts, pistachios, flaked almonds)
Dressing:
Good drizzle of extra virgin olive oil
Good drizzle of caramelised Balsamic Vinegar
Juice of 1 lemon Pepper to taste
Directions:
1. Chop the eggplant, zucchini and capsicum into cubes
2. Place on a roasting tray and drissel with extra virgin olive oil and a good quality balsamic vineagar
3. Add finely chopped garlic and fresh rosemary sprigs
4. Place in the oven until lightly browned
5. Boil quinoa in water (for approx 10 mins) and then strain
6. Place vegetables onto the quinoa
7. Top with some more balsamic vineagar and add pine nuts, pistachios or almond flakes
8. Add a squeeze of lemon and some basil and mint for extra flavour
