Lunchbox Potato

Ingredients:

  • Potato

  • Butter or nuttelex or mayonnaise (if dairy free)

  • Cheese

  • Spring onion (finely sliced)

  • Any extra toppings – baked beans/corn/ tuna/ tomato

Method:

1. Puncture a medium potato (skin on) with a fork and place in a bowl of water, then

microwave for 4-5 mins.

2. Remove from microwave, pour out the water and then cut into pieces with a knife, then

using a fork slightly mash the pieces.

3. Add butter and cheese, then place back in the microwave for 30 seconds

4. Mix well, then add mayonnaise if wanted + spring onion and any other desired topping

Note:

  • I preheat a thermos with boiling water, then when ready, empty the boiling water, add the potato mix and seal quickly to maintain the warmth.

  • If needing dairy free, use Nuttelex/Mayonnaise
