MEDITTERANEAN CHICKEN
Ingredients:
8 chicken thighs
100g green olives
150g apricots (quartered)
150ml red wine vinegar
2 cloves garlic
2 Tablespoons oregano
150ml olive oil
1 bay leaf
2 Tablespoons brown sugar
Salt and pepper to taste
150g pitted prunes (chopped)
For adults (175ml white wine)
Method:
1. Mix olives, apricots, prunes, red wine vinegar, garlic, oregano, seasoning, olive oil and bay leaf in a bowl
2. Place chicken in an oven tray and pour the mixture over, mix well
3. Cover and refrigerate for 4 hours or overnight
4. Preheat oven to 180 degrees Celsius
5. Sprinkle the chicken with brown sugar +/- white wine
6. Bake for 15 mins, then turn down to 160 degrees for another 45 mins.
7. Serve with rice
