Nonna’s Semolina

A family favourite for breakfast or supper, that nourishes the soul

Ingredients:

1/2 cup Semolina (preferably fine) 2 cups milk
1 teaspoon vanilla extract
2 teaspoons sugar

Makes 2 large serves

Directions:

1. Whisk Semolina and milk in a saucepan and put on stove

2. Stir with whisk as you bring the milk to the boil

3. Keep stirring slowly over the next 2-3 minutes whilst the semolina thickens

4. Once the semolina thickens and starts “puffing” at you, remove from the stove

5. Stir in 1 teaspoon vanilla extract and 2 teaspoons (heaped) raw sugar

6. Serve plain or topped with banana or fruit of choice (tinned fruit also yummy)
