Pancakes
Rich in calcium and fibre and loaded with vitamin C that helps iron absorption. Top with berries or banana for extra sweetness.
Ingredients:
1 cup wholemeal plain flour
2 free range eggs (preferably organic)
1 lemon rind finely grated
1 1/4 cup milk
1/4 cup sugar
1/2 teaspoon vanilla essence
Directions:
1. Whisk all ingredients together until runny consistency forms
2. Warm fry pan on moderate heat and melt 1-2 tsp butter
3. Pour first pancake (1/3-1/2 cup mixture at a time), tilt pan to allow mixture to spread
4. Cook on one side until bubble appears, then place spatula underneath and flip over for about 15 seconds
