Pesto Pasta

Ingredients:

  • 500g pasta

  • Pesto

  • 2 cups fresh basil leaves

  • 2 Tablespoons fresh lemon juice

  • 1/2 cup baby spinach leaves

  • 1/4 cup grated Parmesan cheese

  • 1/2 cup pine nuts or walnuts (toasted if desired)

  • 1 garlic cloves, peeled

  • 1/2 cup extra-virgin olive oil

  • Salt and pepper to taste

Method:

1. With food processor, finely blend all pesto ingredients until very smooth consistency

2. Cook pasta in boiling water – as per instructions on the pack

3. Once pasta is just cooked, strain, then add as much pesto as you wish and stir through well

4. Drizzle extra olive oil over at the end if wanted and season to your liking.

Notes:

1. can also add avocado for a creamier consistency.

2. Can also add parsley into the pesto mix.
