Ricotta Mousse
Ingredients
- 1 cup full fat ricotta cheese 
- 3-4 teaspoons cocoa powder 
- 3 teaspoons honey or sugar 
- ½ tsp pure vanilla extract 
- Option to swap cocoa for 1 teaspoon grated lemon rind (zest) 
Method
- Add all the ingredients into a bowl and mix well until smooth. This can be done either with a food processor or whisk. 
- Once smooth, place in a bowl 
- For a slightly thicker consistence, place in the fridge for 60 mins prior to serving. 
Serving suggestions:
- With pieces of soft fruit for dipping into the mouse 
- With French toast or homemade pikelets 
- With regular grainy toast 
- Top with granola and fruit
