Ricotta Mousse

Healthy kids recipe

Ingredients

  • 1 cup full fat ricotta cheese

  • 3-4 teaspoons cocoa powder

  • 3 teaspoons honey or sugar

  • ½ tsp pure vanilla extract

  • Option to swap cocoa for 1 teaspoon grated lemon rind (zest)

Method

  1. Add all the ingredients into a bowl and mix well until smooth. This can be done either with a food processor or whisk.

  2. Once smooth, place in a bowl

  3. For a slightly thicker consistence, place in the fridge for 60 mins prior to serving.

Serving suggestions:

  1. With pieces of soft fruit for dipping into the mouse

  2. With French toast or homemade pikelets

  3. With regular grainy toast

  4. Top with granola and fruit
