Ricotta Mousse
Ingredients
1 cup full fat ricotta cheese
3-4 teaspoons cocoa powder
3 teaspoons honey or sugar
½ tsp pure vanilla extract
Option to swap cocoa for 1 teaspoon grated lemon rind (zest)
Method
Add all the ingredients into a bowl and mix well until smooth. This can be done either with a food processor or whisk.
Once smooth, place in a bowl
For a slightly thicker consistence, place in the fridge for 60 mins prior to serving.
Serving suggestions:
With pieces of soft fruit for dipping into the mouse
With French toast or homemade pikelets
With regular grainy toast
Top with granola and fruit
