Eton Mess

Ingredients

  • Shop bought meringues

  • Yoghurt – coconut (Vanila or mango), soy (strawberry or mango) or regular vanilla yoghurt

  • Fruit – mango, strawberries, blueberries, raspberries

Method

  1. Break up shop bought meringue into small chunks

  2. Chop up strawberries and mango

  3. In a glass or clear plastic cup add a layer of meringue to the bottom (about 1-2cm thick)

  4. Then add a layer of fruit

  5. The add approx. 2 Tablespoons yoghurt as the next layer

  6. Then repat – first with broken meringue pieces, then fruit, then yoghurt

  7. Keep repeating to the desired height/serve size

  8. Finish with fruit on top and top with some desiccated coconut
