Containing iron rich beef mince, this meal is a great opportunity to stash lots of vitamin loaded vegetables
Ingredients:
4 tablespoon extra virgin olive oil
1 brown onion, finely chopped
1 garlic clove, finely diced
500g organic beef mince, chicken or meat substitute
1 carrot, finely diced or grated
1 zucchini, finely diced or grated
2 tablespoons tomato paste
500g of passata (pureed tomatoes)
1 tablespoon diced fresh herbs: parsley/oregano/basil
500g (1 packet) dried pasta
Salt reduced stock (any type) if needed
Directions:
1. Heat the oil in pan and add onions – caramelise on medium heat for 5 minutes, then add garlic in the last minute
2. Add beef and cook for a few minutes, stirring well
3. Then add other vegetables and cook for a few minutes before adding in the tomato paste and passata
4. Add in fresh herbs then simmer on low heat for approx. 20 mins. Note: you may need to add extra water to the pan during this time – you could also add salt reduced stock
5. Boil the pasta for the recommended time until just cooked (al dente), then drain and mix through the sauce
6. Serve immediately
7. Option to serve with grated cheese or parmesan
