Eton Mess
Ingredients
Shop bought meringues
Yoghurt – coconut (Vanila or mango), soy (strawberry or mango) or regular vanilla yoghurt
Fruit – mango, strawberries, blueberries, raspberries
Method
Break up shop bought meringue into small chunks
Chop up strawberries and mango
In a glass or clear plastic cup add a layer of meringue to the bottom (about 1-2cm thick)
Then add a layer of fruit
The add approx. 2 Tablespoons yoghurt as the next layer
Then repat – first with broken meringue pieces, then fruit, then yoghurt
Keep repeating to the desired height/serve size
Finish with fruit on top and top with some desiccated coconut
